Our Traditional Cheeses  – all free of rBGH and GMOs!

In December 1993, Cedar Grove Cheese became the first in the country to assure its customers that its products were rBGH-free.  Recombinant Bovine Growth Hormone, or rBGH, is a synthetic hormone used by some farmers to increase milk production.  We believe that consumers wishing to avoid dairy products containing milk from rBGH-treated cows should have that choice.  Although the FDA has declared that rBGH is safe, many consumers have indicated that for a wide variety of personal, social or political reasons, they want to buy dairy products made from milk produced by untreated cows. Cedar Grove Cheese is committed to remaining rBGH-free and will continue to provide consumers with a clear and concise statement of our policy.  All farmers providing milk to Cedar Grove Cheese have pledged NOT to treat their cows with rBGH.  Wisconsin state law authorizes us to rely on those pledges and to inform consumers of the farmers’ promises.

In January 2001, Cedar Grove Cheese decided that all its cheese should be made exclusively with non-genetically modified organisms (GMOs).  We carefully select our cultures and enzymes based on the non-GMO status of the product. All of our cheeses are vegetarian and gluten free. /

Marble Colby

A multiple award-winning yellow and white Colby combined to create a marbled effect. A very attractive cheese.

Colby

First produced in Colby, Wisconsin in 1874. Mild flavor similar to Cheddar. Firm open texture with tiny holes. Slice for sandwiches; shred into casseroles; cube for snacks.

Monterey Jack

Delicate, slightly tart flavor. Creamy open texture. Slice for sandwiches; shred on casseroles, soups, and Mexican-style dishes.

Smoked Cheeses

Our cheeses are smoked naturally at our local butcher over hickory chips.  This gives it a less intense but more authentic “smoky” taste than other cheese that is made with smoke flavoring.  We offer Smoked Medium Cheddar, Super Hot Pepper Jack and Baby Swiss.

Muenster

Very mild flavor and smooth texture.  Good for melting on sandwiches

Butterkase

Similar to Havarti but slightly softer and even more buttery.  Bob Wills, owner and president of Cedar Grove Cheese is a certified Wisconsin Master Cheese maker  in this style of cheese.

Farmers

Style (soft-fresh to semi-soft) varies worldwide. Cedar Grove’s Farmers Cheese is similar to Havarti, but lower in fat (less than 2%). Buttery, slightly acidic flavor. Smooth, supple texture. Shred in potato dishes and casseroles; slice for sandwiches; cube for snacks.

Swiss

Nutty, bittersweet taste.  Large holes in cheese.  Good for slicing for sanwiches, and essential for Reubens!

Baby Swiss

Milder flavor than Swiss.  Smaller holes make it easier to slice.

Pepper Jack

Red and green jalapeño peppers incorporated into the cheese.  Also available as Super Hot with jalapeño and habanero peppers.

Cheddar

Rich, nutty flavor becomes increasingly sharp with age. Smooth, firm texture becomes more granular and crumbly with age. Usually yellow; also available white. Slice for sandwiches, snacks; shred into casseroles, soups and sauces.

Havarti

Buttery, slightly acidic flavor. Smooth, supple texture with tiny holes. Slice for sandwiches; shred in egg dishes; dice on salads.  An award winner!

Grass Fed

Prairie Premium cheese, made from the rich, grade-A milk of grass grazed cows, is creamy and full of flavor.   Cows grazed on lush meadows and fields of grass and clover produce a superb milk brimming with the natural flavor components found in plants, which are also natural antioxidants. This cheese is rich in vitamins and nutrients, the grazing method is great for cows and the farming method is beneficial to the environment.

Specialty Cheese

Faarko

A semi-soft Wisconsin dairy delicacy that adds the slightly tangy flavor of Wisconsin sheep’s milk and melds it with the smoothness of cow’s milk.  A rich and complex cheese.

Montague

This cow and sheep milk proprietary blend give this cheese a rich flavor. It is relatively mild in favor with just a hint of lanolin.  Good with Avgolemono (Greek egg lemon soup), crusty bread, and olives. Serve with a dry Spanish wine like Tempranillo or Rioja.

Donatello

A 100% Sheep Milk cheese with a firm texture and a rich and nutty flavor.  It is aged for at least 6 months. Grate it over pasta or eat it by itself. An award-winning favorite of many! Pairs well with a big red wine or an American porter.

The son of Banquo.  This cheese has a mild nutty flavor reminiscent of a Manchego.  It is aged a minimum of 60 days.

Milled Sheep Cheddar

100% Sheep Milk cheese made as traditional milled cheddar that provides a smooth, dense texture. This cheese is mild and sweet.

Sheep Milk Feta

Made with 100% sheep milk cheese, this Feta is made in the traditional style with a salty and tart flavor. An award winner!

Pecorino

Our version of Pecorino Toscano .  This cheese is softer and creamier than Pecorino Romano.  We make this cheese using 100% sheep milk or blend of sheep and cow.
